nearly the weekend

I've not been have the greatest couple of days. I'm shattered and sick of people complaining.

One good thing is that I'm still sticking to slimming world  so at least I've got some routine down, although I feel like I'm going to turn in to a piece of fruit or veg with the amount of it I'm eating.

My slow cooker is a god send, as my tea is done for when i come in to work, so I'm not picking at stuff, I just need to learn portion control as I seem to eat the same thing for three nights running as I make far to much all the time.

Finally got my free cinema ticket from work today, which I got excited about as it means a cheap outing to the cinema.

Crappy week down now to a positive week.

Ok this week has been really crappy. I had a bad day wednesday thanks to a counseling appointment, I've then ate cream cakes on thursday night, they were lovely but felt so guilty after eating them.

I've since had a meal in a restaurant and a bought curry from a supermarket.

I really need to get my head back in the game as I'm now scared that I've done some of the hard work i did last week to get to my club ten at slimming world.

The exercise side hasn't been bad as I walked 6 km on wednesday and I went to cherryburn yesterday so walked round there.

Really need to stay positive and have a good next few days, as this should also help my depression.

tough day

It's been a tough day and I'm now really tired both mentally and physically.

As I'm shattered I've not done a great deal, but i did manage to cook a apple and cinnamon cake for pudding tomorrow as we as a health lunch and time.

I've managed to fit a walk in to today so very happy with the body magic but could do with some chocolate.

Yeah for club 10

I  went to class tonight and it was a great success.  I lost 3lb which meant i reached my club 10 and only have 0.5lb to loose to get my 1and half stone award.

I love going to class as it's always a good laugh.


The sun is shinning

I love it when the sun shines. I tend to stick to the healthy eating when the weather's nice. I've managed to get loads of things prepped for meals which i'm planning on freezing.

I've got soup cooking in the slow cooker and handmade crips in the oven.

Tickets bought for the avenger on thursday night and looking forward to getting weighed.

Yeah for Family

I've been having a bad day today. I've had really bad chocolate cravings all day. Having the craving is just my luck as i get weighed tomorrow.

I've put stuff in the slow cooker to make curry for tea, so I'm not tempted to pick later on today.

The only saving grace today is that my aunt has sent me some recipe, they are slimming world ones but very excited to try some of the recipes from them.

Celery sticks anyone!

Today I'm fed up of only opening cupboards and the fridge to only find salad and fruit. I really want something greasy and fattening. I had noodles and veg for my dinner and I'm currently eating celery sticks.

However I must stay strong and not eat the fatty or greasy food and stick the the salads and fruit.


The things you shouldn't be eating on a diet!

Diets traditionally tell you not to eat fatty food like burgers and chips or chocolate. However slimming world is completely different to any other diet I've ever tried. They say you can eat chips and burgers if you make them your self. You can also have chocolate and count it as syns.

So me being me had burger and chips last night. It was completely free on slimming world as i counted the bread bun as a healthy extra b. It was well worth the time it took to make the burger.

To make the burger all i did was mix some beef mince (5%fat or less), with a onion, and salt. added a beaten egg to the mix to help bind, then spilt the mixture in to 4 patties. Rest in the fridge for at leat half an hour. Then grill until cooked.


I've also made a chocolate, orange and cardamom chocolate mouse. Now this is 4.5 syns on slimming world but it's worth it. It's like eating melted terry's chocolate orange.


Mouse recipe:

Ingrediants:
  • 60g dark chocolate, broken into small pieces
  • 1 orange
  • 3 medium eggs, separated*
  • 6 tbsp artificial sweetener
  • ½ tsp crushed cardamom seeds
  • 4 tbsp fat-free natural fromage frais, to serve
Method
  1. Melt the chocolate in a large heatproof bowl over a pan of gently simmering water (or in the microwave on a low heat for 30 seconds). Allow to cool slightly. Finely grate the zest of half the orange and peel thin strips of zest from the other half. Set aside.
  2. Put the egg whites in a clean glass bowl. Beat with an electric hand whisk on a medium speed until they stand up in stiff peaks, but are not too dry.
  3. Whisk together the egg yolks, 4 tbsp sweetener, the grated orange zest and cardamom seeds. Mix with the chocolate.
  4. Using a large metal spoon, lightly fold in the egg whites until well combined. Spoon the mixture into 4 individual cups, ramekins or glasses and chill for 3-4 hours, or until set.
  5. Cut any white pith off the strips of orange peel and put in a small pan with the remaining sweetener and 400ml water. Bring to the boil, then reduce the heat to medium-low and simmer gently for 12-15 minutes. Drain and allow to cool.
  6. Decorate each mousse with the crystallised orange zest and serve with a spoonful of fromage frai

 I like to try new things and iceland have started to do an exotic meat section. Now ostrich fillet isn't something i would normally pick up but i thought it was worth a try. I can say that i was disappointed with it and don't think I'll be trying it again. It didn't really taste of anything and it was quite tough.



I must be mad!!

I started going to slimming world in january as I had ate what ever my inner fat girl wanted for a couple of years and since i sit down for most of the day when I'm at work it had meant that i was nearly 14 stone. I also had rolls of fat and clothes just didn't fit properly.

My boyfriend thought i was mad but off I was determined to make a go of it and set a goal of reaching 10st. I have given myself the target of reaching this weight by next october as I'm going to a wedding and don't want to be the fat person in the photos.

So far I have lost 1 stone and 3.5lb, The group sessions are fantastic and the support is amazing. It has helped with my love of cooking as I'm having to think of new things to cook so that i don't get board eating the same food all of the time. It has also brought out a new love of simple foods.

There has been a few mishaps with trying new foods the main one is the ostrich fillet, but all in all most things have been tasty (if i do say so myself), cheaper to make and more filling. My boyfriend has also enjoyed most of the things I've made as well which is also a bonus.
